How do I defeat Metal Slimes (in their various forms) before they flee on Dragon Quest VIII?

Whenever I fight the Metal Slimes, Liquid Metal Slimes, or Metal King Slimes they almost always flee before I can kill them. I've only managed to kill a few metal slimes and none of the others.
